Living in Florida, we really enjoy our fresh citrus during the winter months and this is a nice combination chuck full of vitamin C!
1 large bunch of fresh broccoli
1-1/2 tbsp butter
1-1/2 tbsp flour
1 teas grated orange rind
1/2 cup fresh orange juice
1/2 cup fresh orange sections
1/4 teas dried whole tarragon, optional
Trim broccoli and remove tough part of stems; wash and cut into spears, making slits in the thick part of the stalks. Place in a steamer with boiling water and cook until desired tenderness.
While broccoli is cooking, melt the butter in a heavy saucepan and add the flour, stirring constantly for 1 minute. Slowly add the rind and juice, stirring with a wire whisk until smooth. Add the orange sections and tarragon and cook over medium heat stirring constantly until thickened and bubbly hot.
Remove broccoli to a serving platter and spoon sauce mixture over top. Great over a bed of rice with a ham steak or pork roast. Enjoy!
