Quick Chicken Spaghetti

Great way to use left-over chicken…..

 

3 teas olive oil
1-1/2 medium bell peppers, sliced
1 medium onion, chopped
1 clove of garlic minced
2 cups cooked chicken breast, cut in strips
1-1/2 cups chicken broth
2 tbsp sour cream
1/4 cup minced fresh chives
Pepper to taste

 

Cook veggies in the oil over a medium heat, stirring constantly, until softened. Add the chicken, broth and sour cream; reduce heat and simmer for 5 minutes. Stir in the chives and pepper. Serve over hot cooked spaghetti or if you prefer, hot cooked noodles and sprinkle with some Parmesan cheese…Enjoy!

Pasta Pie

Use left-over cooked spaghetti for this one!

 

4 cups cooked spaghetti
2 egg whites, beaten
2 tbls milk
1/4 cup grated fresh Parmesan
1 teas dried oregano
1 teas dried basil
1 teas paprika
1/2 teas rosemary

 

Combine all ingredients and mix well. Place in a baking dish that has been sprayed with cooking oil. Bake in a 350 degree oven for 20 minutes or until golden brown. Cut into serving size pieces. Have some spaghetti sauce for dipping and enjoy!

Sometimes if I have a little mozzarella in the frig, I add that too and I add a little sauted onion in it to give it a little different flavor!
