Quick Chicken Spaghetti
Great way to use left-over chicken…..
3 teas olive oil
1-1/2 medium bell peppers, sliced
1 medium onion, chopped
1 clove of garlic minced
2 cups cooked chicken breast, cut in strips
1-1/2 cups chicken broth
2 tbsp sour cream
1/4 cup minced fresh chives
Pepper to taste
Cook veggies in the oil over a medium heat, stirring constantly, until softened. Add the chicken, broth and sour cream; reduce heat and simmer for 5 minutes. Stir in the chives and pepper. Serve over hot cooked spaghetti or if you prefer, hot cooked noodles and sprinkle with some Parmesan cheese…Enjoy!
