Mexican Style Shrimp Cocktail

I know a lot of people will be partying hardy tomorrow with Cinco de Mayo on tap and this recipe is such a tasty treat to serve up for you and your guests! I really love the combination of flavors in this  dish with the tomato and cilantro. I learned to love cilantro when I worked in a Cuban restaurant as it was a staple in many of the foods that the owners incorporated into so many dishes as well as making a salad out of it!

Mexican Style Shrimp Cocktail
  • 3 large ripe tomatoes, chopped small
  • 2 ripe avocados, chopped small
  • 1 bunch of scallions, sliced thin
  • 1-1/2 cups celery, sliced thin
  • 1 can (46 oz) V 8 Juice
  • ¾ cup fresh chopped cilantro
  • 1 large chili pepper, seeded and minced
  • 1-1/2 tbsp minced garlic
  • Salt and fresh ground pepper to taste
  • 2 lbs headless medium shrimp, cooked and cleaned
  1. Combine all ingredients, save the shrimp and mix well.
  2. Stir in the shrimp, cover and place in the frig for a minimum of 2 hours to blend flavors.


I’m not sure of our dinner plans for tomorrow, but I do have shrimp in the freezer……….Enjoy and Happy Cinco de Mayo!

Italian Style Mashed Potatoes

This recipe can actually be done a couple of ways, by just putting it together as below or it could also be done by baking off potatoes, scooping out the meat and mixing it with the ingredients below and then stuffing the skins with the mixture. If you decide to use baked potatoes instead, just use a couple of extra potatoes as you will lose some of the meat of the potato by leaving the skin in tack. Either way, it is a very tasty dish and one that any potato and salami lover will enjoy!




Italian Style Mashed Potatoes
  • 4 medium to large potatoes, pared and quartered
  • ½ medium sized yellow onion, sliced
  • 1 clove of garlic, minced
  • 3 tbsp sour cream
  • ¾ cup hot milk
  • 1 whole egg + 1 egg yolk
  • ¼ teas white pepper
  • ½ cup chopped salami (Genoa or hard, whichever you prefer)
  • ½ cup shredded mozzarella cheese
  • ⅓ cup minced scallions with tops
  • ¼ cup grated Parmesan cheese
  1. Place potatoes in a saucepan with the sliced onion and garlic; cover with water.
  2. Cook potatoes until just tender and drain.
  3. Mash potatoes and add the sour cream, milk, eggs and pepper.
  4. Whip potatoes until light and fluffy;
  5. Fold in the salami, mozzarella cheese and scallions; transfer to a baking dish and sprinkle with the Parmesan cheese.
  6. Bake in a 450 degree oven until the top is nicely browned, about 10 minutes or so.


We can make a meal out of this one……………..enjoy!
