Barbecued Hot Beef Sandwiches

Well, it’s Friday again and time to introduce you to another recipe from my Sunday Night Football Cookbook and this gentleman needs no introduction if you follow football at all, John Madden. Let me tell you, when he used to scribble all over that board it would MADDEN me, that man loved to circle things and make lines all over the place and when he was through you couldn’t even tell what started the whole mess. Well anyway, this recipe is the first one they tested for his cookbook and he says and I quote “The minute I bit into it, I knew we were off to a good start”.

Barbecued Hot Beef Sandwiches
  • 2 tbsp unsalted butter
  • 2 onions, chopped
  • 2 garlic cloves, chopped
  • ½ cup chopped celery
  • 2 cups ketchup
  • 3 tbsp cider vinegar
  • 3 tbsp Worcestershire sauce
  • 1 teas hot sauce
  • ¼ cup packed brown sugar
  • 1-1/2 teas chili powder
  • ½ teas dry mustard
  • 2 dashes paprika
  • 2 teas salt
  • ½ teas freshly ground black pepper
  • 3 lbs cooked shredded roast beef
  • 10-12 hamburger buns
  1. In a large skillet, heat the butter over medium heat; add the onions and saute until tender and lightly browned.
  2. Put the onions, 1-1/2 cups water and all the remaining ingredients except the buns in a 4-6 quart slow cooked.
  3. Cover and cook on LOW for 6-8 hours.
  4. Pile the meat on buns and serve immediately.

These do sound really great and the next roast beef I cook, this will take care of the left-overs nicely…………enjoy!
