Hominy Cheddar Bake
Well it’s another Monday and with a trip to the doc tomorrow, I figured I’d get something in today. But first I want to share another kitchen disaster that happened yesterday. I had seen a waffle pizza on the internet and didn’t bother to go to the site to read the recipe, hence YUK!
My loyal Husband ate his but mine went right to the scrap bag for the chickens… It was doughy but yet well cooked and I don’t know if I had my waffle iron on too low of a setting or what, oh well. I will try it again someday and maybe I will be able to perfect it in the future.
Now onto hominy, one of our favorites foods! Growing up in the north, I never experienced corn in this fashion and it wasn’t until I met Kenny that I tried it. Grits was another thing that I never had until I moved to the south, two great foods that most of the poor Yankees will never experience!!!
- 2 tbsp bacon drippings
- 2 oz canned chopped chilies
- 2 tbsp chopped onion
- 1 can (12 oz) yellow or white hominy
- 4 oz finely grated cheddar or American cheese
- 2 oz melted butter ½ cup milk
- Salt and pepper to taste
- Mix all ingredients well into a bowl.
- Transfer into a casserole dish sprayed with cooking oil and bake in a 350 degree oven for about 45 minutes.
