Chicken Nuggets Rumaki Style
When it rains it pours, literally and figuratively! Yes, Monday, Mother Nature decided we were dry enough and dumped another 4 inches of rain on us! We were just getting dried out enough that we were ready to get the guy in here to put rock down and BAM. We also found out that our newest addition to the family does not do well with thunder storms and Tuesday morning with a light rain still coming down, Jingles refused to go off the porch to go potty so I left her out thinking I was safe, oh no. The rain eased up enough that she went off the porch to do her business and decided to check out the neighborhood! After about an hour of walking around and calling her, Kenny decided to take the car so he could go even farther is his search and I came in to make some phone calls to the neighbors so they could be on the lookout too. Kenny came back empty handed and while looking out the back door noticed her at the edge of one of paths through the woods, he called her and she turned tail and ran in the opposite direction, disorientated in her new environment? About a half an hour later, my neighbor was beeping out in front of our driveway (have it roped off because of the muck), her husband spotted her way down at the end of our road and Beverly offered to drive me to where they saw her. After having to ford a stream about 3 inches deep running over the road, up the hill we went and when we reached the top, there she was. I jumped out of the SUV, and the first “Jingles” out of my mouth brought her running to me. You could just see her happy face saying, “Mom, you came to rescue me!”, it was so cute until I opened the door to the vehicle and she bolted in on my neighbors seat, mud and all! Neighbor was fine with it and Jingles curled up on my lap, happy as a lark to be going home!
So after the day I had had, I was not in the mood to do much cooking but still had some chicken that I needed to packaged up for the freezer and some of it ended up on the dinner table that night in the “form” of Rumaki. I love the real version of Rumaki, but husband is not a fan of any kind of liver, so I threw this together hoping it would work and it did. One of my dilemmas however, was the fact that the only water chestnuts I had were sliced instead of whole and they were a pain in the A** to keep inside the chicken nuggets! The last few times I had been shopping, no whole water chestnuts were to be found in the 3 grocery stores I had went to, a shortage on these now? However, yesterday on my shopping trip, they showed back up at 2 of my main shopping haunts and they are now stocked on my shelf here at home!
- Boneless, skinless chicken breast cut into 1-inch nuggets
- 1 whole water chestnut per nugget
- ½ strip of bacon per nugget
- Oyster sauce
- Light brown sugar
- Cayenne pepper, optional
- Make a slit in each chicken nugget and insert 1 chestnut.
- Wrap with a piece of bacon and secure with a toothpick.
- Place on a baking sheet lined with foil.
- Pour oyster sauce over top of nuggets and then sprinkle each with a little brown sugar and cayenne pepper if using.
- Bake in a 350 degree oven for about 25-30 minutes or until bacon is nice and crispy.
- *I used one large chicken breast and it made about a bakers dozen!
Better stock up on bacon as there seems to be some kind of virus killing off our piggy supply here in the U.S.! Didn’t bacon just skyrocket not long ago? Here we go again bacon lovers………. Hope you enjoy, it’s just a simple dish, but ever so tasty……………….
