These little sandwiches are sure to please your Super Bowl guests! You can also have most of the ingredients prepped early so all you have to do is basically throw them together, pop them in the oven and their ready to be enjoyed by all…. But first let me share my week……………………

Tuesday we had to go to Gainsville to have a recall fixed on our car and while we were there, looked at some cars they had for sale. We were tired of having to drive all the way down there just to get the Tiguan serviced and wanted to have a vehicle that we could have taken care of here locally. Well folks, we drove home in a 2015 Equinox LS which is like brand spanking new; moved on up in the world, love it!

It took us 4 hours at the dealership and we were due to go visit granddaughter which we did do, but just not for as long as we would have liked. Urlic was sound asleep when we arrived and still out like a light when we left. Brother Niklaus on the other hand, was wide awake and Gram and Pappy got to hold him and give him lotsa  hugs and kisses as he is becoming much more alert now. He is only two months old and almost too heavy for this old body to pick up, gonna be just like his older brother and daddy, BIG boy! We also got to take Eric’s pickles to him (Normally Sweethot Dill Pickles which we will also enjoy on our platter on Sunday) and as he was at work already he didn’t get to try them when we were there. When he got home though, he about demolished the whole jar before the night was over, guess he liked them, YES, score one for Gram!


Back to the Super Bowl and these little bites from heaven. Rooting for the Panthers Sunday but really don’t care who wins as we like both teams, picked them to see some newer blood take the title! We will be having Kenny’s traditional Po-Po Platter filled with lots of cold cuts, cheeses and assorted pickles piled high on all different kinds of crackers…. Can’t wait as it always seems to taste better on the actual day of the Bowl. I was so excited shopping the other day as I found that crescent rolls now come in sheets without the perforations, so perfect for this and so many other recipes! So with that I give you…..

Taco Sandwich Bites
  • 1 pkg (8 oz) crescent rolls or sheet
  • ½ lb lean ground beef
  • ½ pkg taco seasoning
  • 1 small tomato chopped small
  • ¼ to ½ cup of chopped onion
  • ⅓ cup chopped bell pepper
  • 2 cups shredded sharp cheddar cheese
  • Taco sauce and sour cream for dipping
  1. Cook ground beef and season with taco seasoning; drain off any fat.
  2. Unroll crescent rolls or sheet and halve (if using rolls, press together perforations on both halves.
  3. Place one half on a lightly greased cookie sheet and sprinkle with one cup of the cheese.
  4. Sprinkle seasoned beef over cheese followed by the onions, peppers, tomatoes and finally with the remaining cheese.
  5. Place the other half of dough on top and pinch edges together to seal.
  6. Bake in a 400 degree oven for about 12 minutes or until golden brown.
  7. Cut into desired sized squares and serve.

Black Eyed Pea Soup With Ham And Spinach

With the cold that came all the way down to Florida this past weekend, it was the perfect time for me to get busy in the kitchen making a dish that would warm our tummies and sooth our souls. I know a lot of you up north had it down right freezing compared to us but when we don’t get out of the 40’s during the day time, no sun and have old man winter blowing those cold temps out of the north, it’s down right freezing to us here in the south! I even got to see a few SNOW flakes fluttering in the air on Saturday morn, WOW, I was a happy, happy camper!

I had a few plans for Saturday that went by the wayside as all we wanted to do was get the fireplace cranked up and enjoy what I hypothetically called a “SNOW DAY” for us retired fogies, just relaxing, snuggled up on the couch and watching movies.

I had seen a recipe similar to this by Chef Curtis who represents our Winn Dixie grocery stores and with a few alternate ingredients, it served us up something tasty and was a perfect compliment for the cold weather along with some homemade cornbread!

  • 8 oz bacon, chopped
  • 1 medium sweet onion, chopped
  • 2 cloves of garlic, minced
  • 1 teas crushed red pepper
  • ⅓ cup vinegar
  • 1 tbsp light brown sugar, packed
  • 1 16 oz bag dried black eyed peas, rinsed
  • 10 cups water, more if needed
  • 1 lb fresh baby spinach
  • 2 cups cooked ham, cubed
  1. Cook bacon over medium heat in a Dutch oven until crispy, drain on paper towels reserving fat in pan.
  2. Add onions and garlic to pan and saute until transparent in color; add the red pepper, vinegar, brown sugar and the 10 cups of water.
  3. Cover and simmer for 15 minutes.
  4. Stir in black eyed peas, cover and simmer for another hour or until peas start to soften adding more water if necessary.
  5. In batches, add spinach, letting each batch wilt before adding next batch.
  6. Recover and let simmer another 45 minutes or until peas are of desired consistency.
  7. Stir in ham and heat just until ham is heated through.
  8. Ladle into soup bowls and top with crumbled bacon pieces and more chopped onion if desired.
  9. Have some extra vinegar close by as husband added more to his!


Well, I actually have a couple of more recipes to share with you before the week is over! It’s been refreshing to have all the Christmas decor put up for another year and the house back to our normal craziness with one exception, Kenny decided to repaint our living room and we are so happy with the outcome and I am soooo happy to have time back in my kitchen to experiment again with some great tasting recipes and of course some bloopers too…….. Hope you enjoy and see ya in a day or two with some special pickles that anyone can do! Oh and a special Happy Birthday to our granddaughter’s boyfriend Eric who hits the big 30 tomorrow, Happy Birthday Eric!!!!
