Horseradish Sandwich Spread

sandwich spread burnttaters 013

Maybe I should have called it Veggie dip?

I have been wanting to make something like this for awhile now and finally this week I tried it! It’s such an easy, quick way to spruce up your nice thick roast beef sandwich, which is exactly what I had in mind upon making it. However, when fixing lunch today, husband pulled out some radishes to go with his Bologna sandwich (he won’t eat my nice rare roast beef from the deli, chicken s***) and dunked a piece into the sauce to taste it; surprised I had enough left for my roast beef!!!!

So we could actually say that this is a great veggie dip too, but wait, I’m not finished yet! Reaching into our chip cabinet, I took out some of my favorite pretzels (Snyder’s Pretzel Poppers) which I usually enjoy with onion dip, slopped up some of the sauce, now dip and yes, another way to bring out the great taste! So if you try this, don’t limit what you can use it for, it’s great for many different food types, that is if you like horseradish…………

Horseradish Sandwich Spread
  • 1 cup mayo
  • 2 tbsp prepared horseradish or more to taste, I like it hot, hot, hot so I used more
  • Fresh squeezed lemon to taste
  • White pepper to taste
  1. Combine all ingredients in a plastic container, cover and refrigerate for at least an hour to meld the flavor.
  2. Serve on sandwiches, or use as a dip for veggies and chips.

Coming up next is twice cooked scalloped potatoes? you’ll get a laugh out of this one! Hope you enjoy this easy, tasty recipe………………..later!

Chicken And Bacon Spread

Thinking of the Super Bowl next weekend, I was strumming through some of my older books for any kind of appetizers, dips or snack food for the big game and came across this recipe from a 1958 pamphlet put out by Good Housekeeping and it sounded interesting, a little different and quit simple. Another plus, was the fact that it can be made ahead of time for those of you who are having big parties; there’s nothing better than having your time free from the kitchen for all those guests! I love my old cookbooks and pamphlets and have quite a collection, one dating back to 1906 called the Enterprising Housekeeper with illustrations of handy kitchen gadgets for the then, modern kitchen, WOW! I have my chili all ready for next weekend, I mean, what’s a Super Bowl without chili anyway? Oops, I forgot the brewski, another must have! But during the day, we’ll probably just munch on snacky type stuff and this recipe caught my eye, it’s got BACON!

Inside look, it's for sure it from the 50's!

Inside look, for sure it’s from the ’50’s!

This recipe only makes a little over a cup, so if you have a large crowd coming, you might want to double or triple it. Serve with cocktail breads or crackers, or if you’re like me, I was thinking on the lines of using it for stuffing celery and maybe adding a little hot sauce too! Hope you enjoy…………….
