Mac N Cheese Meatloaf

Husband loves his meatloaf and loves his mac ‘n cheese, so you know where this ranks in his favorite food category! We’re finally having a beautiful sunny day today after days of gloom and doom although yesterday did seem to take a different turn in the doom department. Having to go to the grocery store to pick up a few things, we ran into a few great bargains on meat and this afternoon I will be repackaging and making room in the freezer for all our goodies. Kenny bought me a beautiful bouquet of flowers which are proudly displayed in my living room and last night, because of the weather, we had one of our favorite meals, just a good old freshly ground burger (we bought some chuck roasts on BOGO) and some fries with gravy. We even had a nice fire going as the weather had that winter chill in the air. To top off the evening, we even curled up by the fire and watched a chick-flick. Whenever we go shopping, we always get some lottery scratch offs and scratch them off when we get home. Well we didn’t win a fortune, but Kenny did win $25 and I won $10 so that was another plus for the day; I knew things just had to get better this week! Of course as far as my oven is concerned, doc can’t find the parts which means a new oven is in store for my kitchen, oh my! Well just wanted to give you a little heads up on my continuing saga and it’s time to get a recipe in for you to enjoy!

Mac N Cheese Meatloaf
 
Ingredients
  • 4 oz elbow macaroni
  • 1 lb ground beef
  • ½ cup soft bread crumbs
  • ½ cup milk
  • 2 eggs, slightly beaten
  • ½ cup chopped sweet onion
  • 2 tbsp chopped bell pepper
  • ½ cup grated cheddar cheese
  • Salt and pepper to taste
Instructions
  1. Cook macaroni according to package directions and drain well.
  2. Mix all ingredients together with the cooked macaroni.
  3. Shape into a loaf and bake in a loaf pan that has been sprayed with cooking oil, in a 350 degree oven for 1 hour.
