Honey Of A Peanut Butter Loaf
Well, if this had went according to Plan A, you could have been sampling a taste of your own today! This is another one of our disasters or almost disaster that happened yesterday! Husband wanted to get the north forty of the property mowed before the rain and according to radar, it seemed to be somewhat far off and so he was off, and I mean that in more ways than one, love ya honey! Now since he had checked radar and all was clear on the western front, I figured I’d stay busy making this bread. With the batter almost complete, BAM, lightening struck really really close to home. Worried about him first and my bread second, for a second there it was a toss up…ha ha!
I stuck my head out to see if he was on his way back to shelter; sure enough he was heading for the barn. Okay he’s safe, now onto my bread………. It wasn’t a little over 5 minutes in the oven when the power starting flickering continuously and then the worst happened, IT WENT DARK and then it stayed DARK for 2 hours! What to do? I pulled the bread out of the oven and the top was just starting to set up. ?!#* Kenny suggested I stick in the frig and I decided to just leave it out.
With power restored, I turned the oven back on and with fingers crossed, I threw it back in for the amount of time per the recipe. After said time, I checked and it looked a little funky, but it tested done or so I thought. Out of the oven, cool in the pan for a few minutes and now onto a wire rack to finish cooling. This is when it really got so bad that it was actually funny!
You see, I had tested it for it’s doneness and all seemed fine, NOT! My guess was that the top was so nice and crunchy from the double exposure to the oven that when I inserted my tester, the top being so crispy wiped all the uncooked dough clean. Upon flipping it over to the rack, the raw dough came gushing out from under the nice cooked top of the bread, oops! We quickly tried to amend the sitiation (and yes I meant to spell it that way) and threw it back into the oven without it’s top and finished cooking it. It came out a little funky looking, but I have to say the flavor was there and it will still be enjoyed with coffee or topped off with some nice homemade ice cream! Next time I bake, there will be blue skies above and absolutely no hint of rain coming down on our parade…………
- 1 cup peanut butter (smooth or crunchy)
- ½ cup honey
- 2 large eggs at room temperature
- 1 cup of milk
- 2 cups flour
- ½ cup sugar
- 2 teas baking powder
- ½ teas each of salt and baking soda
- ¾ cup chocolate chips
- On medium speed, blend the peanut butter and honey until smooth.
- Add eggs one at a time mixing well after each.
- Slowly beat in milk.
- Sift together the dry ingredients and stir into mixture until just moistened.
- Fold in chocolate chips.
- Pour into a 9x5 inch loaf pan that has been greased and floured.
- Bake in a 350 degree oven for 50 to 55 minutes or until tests done, ha ha.
Hope you have more luck than I did, but at least it is edible and we did get a few chuckles out of the whole ordeal………..enjoy! Another reason that I got in so late…..Naaa…I’ll leave that for my next adventure very soon!
