Easy Seafood Cracker Spread

The other day when out shopping, we stopped at one of  our favorite seafood restaurants for a nice dinner before heading home. Upon bringing our cold brews to quench our thirst, she also brought a plate of crackers and a spread to top them with which we never had been given there before. Of course I had to ask what it was and she told me it was a fish spread. Next question was what was in it, expecting the answer to be “Well I can’t give out the the ingredients” she surprised me by telling us exactly what was in it. I told her about our site and that I wanted to try to copy it at home so I could share it with you because it was so tasty. The restaurants version had two different kinds of fish in it and not having any on hand, I made my version with some crab meat I had tucked in my freezer. We told her how much we enjoyed it and when we asked for the tab, she surprised us again by bring us a take-out container with 2 more cups of the spread along with extra crackers. First time we ever had a waitress tip us and it was happily taken home for another treat! Gotta love it!!!!

Easy Seafood Cracker Spread
 
Ingredients
  • 4 oz cream cheese, softened
  • ¼ cup cooked fish, shrimp or crab meat, minced
  • ½ teas Old Bay Seasoning (more or less to taste)
  • Crackers or even celery and carrot sticks
Instructions
  1. Combine the softened cream cheese with the seasoning and seafood of your choice.

Great for those football parties with some nice cold brew to wash them down. This dip should not be kept too long in the frig, so only make what you think you can eat within a day or two. Enjoy…… It’s OBIF!

Post 4th of July

Well, after a long weekend of just plain laziness, yesterday was our day to get this old house back in order. I wanted to post this yesterday, but had let too much work slide and boy did I pay for it! After dinner, I tried to watch some TV and was dozing off on the couch! I hope everyone partied hardy and no one had any mishaps with cooking or fireworks. Kenny and I just laid around eating and chilling out, something we haven’t done in awhile. Of course, Hallmark started their Christmas in July movies this weekend and if you know me, I am a fanatic for Christmas with over 40 boxes of decorations and still growing. Am I Normal or Nuts?

Feasting on steak, crab legs, salad and garlic bread, we both were stuffed to the gills and couldn’t even eat the holiday dessert I had made which I will share with you hopefully tomorrow. This time I’m a few days late and a few dollars short as today I just wanted to share our weekend!

Our driveway is finally finished after all these weeks and Kenny is a happy camper that we will no longer have to park over on the north forty and hike through the woods with the groceries. The poor guy who put it in for us is one of those people that if it wasn’t for bad luck, he wouldn’t have any. I told him he should write a book!

One of the other things I wanted to share with everyone is that we added a new link in our Links to Visit, http://www.lifewithgarnish.com. Adrian is a true believer in her crock pot and has many recipes involving it’s use. She has even made me think about using it more often when it’s so damn hot that you don’t want to heat up the kitchen! We enjoy her recipes along with the other friends in our links and I hope you will too……..
