Cornish Hens With Sour Cream Gravy
I am a big fan of using sour cream when I cook, so here goes……


2 Cornish hens
1/2 cup flour
3 tbls butter
1 cup sliced onions
1 teas salt
1 teas paprika
1/2 teas basil
1/2 teas pepper
1 can (3 oz) sliced mushrooms with juice
1-1/2 cups sour cream

Dredge hens with flour and saute in butter in a Dutch oven until golden brown on all sides. Add onions and cook for another 5 minutes, stirring while cooking. Combine the salt, paprika, basil, pepper and mushrooms with their juice and pour oven the hens. Bring to a boil, cover and reduce heat. Simmer for 30-45 minutes or until hens are tender and juices run clear. When hens are done, remove to a warm platter and gradually stir the sour cream into the drippings, stirring constantly. Serve hot with the hens and enjoy!
