Bourbon Chocolate Pecan Cookies

Well, it’s another year gone by and I know some of you made resolutions about losing just a little of that weight we’ve all gained since Thanksgiving. Husband is moaning about getting fat and it’s all my fault but I’m not the one who made him go back for seconds and then top it off with dessert.

I am going to give the sweet treats a little break for awhile after I share this one. My daughter sent me the recipe for these wonderfully rich cookies and of course I couldn’t leave well enough alone, just had to alter and add to it a little bit, especially the pecans!

Bourbon Chocolate Pecan Cookies

Ingredients
  • ½ cup softened butter
  • 1-1/2 cups sugar
  • ½ cup unsweetened cocoa powder
  • 1 teas vanilla
  • 2 eggs, room temperature
  • ½ cup bourbon
  • ½ teas baking soda
  • ½ teas salt
  • 2-1/4 cups flour
  • 1 cup chopped pecans, or any favorite nuts of your choice
Instructions
  1. Cream together the butter and sugar until light and fluffy.
  2. Beat in the cocoa powder and vanilla.
  3. Add eggs one at a time mixing well after each; stir in bourbon.
  4. Sift together the baking soda, salt and flour and stir into the mixture.
  5. Fold in the nuts.
  6. Drop by rounded tablespoonfuls onto cookie sheet, 2 inches apart and bake in a 375 oven for about 12 minutes or until set.
  7. Remove to wire racks to cool.

Hope your New Year’s started off well and continues throughout the year. As for us, we had an outside fire in our pot belly stove on our back porch New Year’s Eve and enjoyed our neighbors putting of firecrackers in the distance. Of course, we brought in the new year with some homemade cornbread smothered with fresh cooked black eyed peas to bring us luck to which it did already. Husband won $130 dollars last night on a lotto ticket. One more number and it would have been, pack up our home because we’re movin’ out of Dodge……………………Enjoy!

Almond Raspberry Brownie Bites

First of all, let me share with you why I made these flavorful, gooey tasty treats! This weekend we had a baby shower for our new great-grandson and I wanted to take a little something extra for all to try. Big Hit with all who attended including our first great-grandson, Ulric. He is up and walking all over the place and looked so cute in his new hat that his grandma bought for him!

I also made two large platters of fresh veggies along with plenty of that dill dip that I just posted and a crock pot full of BBQ chicken with homemade rolls to make sliders………

The stork is due to deliver new baby Atticus in the beginning of December, but between you, me and the fence post, I do not believe that he’s going to wait that long to make his presence. Granddaughter is very large and we all joked about her having twins which is not totally out of the question as twins do run on daddy’s side of the family! God help us all………… Now on with something to satisfy our sweet tooth!

Almond Raspberry Brownie Bites

Ingredients
  • ½ cup butter, melted
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ½ cup flour
  • ¼ cup raspberry jam
  • 1 teas almond extract
  • 2 eggs beaten
  • ½ cup or more of ground almonds
Instructions
  1. Stir cocoa into the melted butter until smooth.
  2. Add the granulated sugar.
  3. Ad the flour, jam, almond extract and eggs; combine to make smooth.
  4. Fold in ground almonds and spread evenly into a 9X13 inch pan that has been greased on the bottom; batter will be thin.
  5. Bake in a 350 degree oven for 10 to 12 minutes or until edges begin to pull away from the sides.
  6. Cool on wire rack before cutting into 1 inch squares.
  7. Dust with powdered sugar if desired before serving.
