Mexican Onion Dip

With only a few weeks left until FOOTBALL season, yeah, I thought this would be a great one to munch on during the game.



Mexican Onion Dip
  • 1 can condensed bean with bacon soup
  • 2 slices bacon, cooked crisp and crumbled
  • ½ cup sweet onions, chopped fine
  • 1 cup shredded sharp cheddar cheese
  • 1 can (10 oz) tomatoes and green chilies
  • 1 tbsp hot chili powder
  • ½ cup smooth peanut butter
  1. Break up any large pieces of tomato into small pieces.
  2. Combine all ingredients in the top of double boiler.
  3. Heat over boiling water, stirring constantly, until cheese and peanut butter has melted and ingredients are well blended.
  4. Add bacon and serve warm.


Just grab some corn chips or tortilla chips and dig in. And don’t forget the cold brews to wash them down………..

South Of The Border Fish Sticks

Corn bread and fish sticks, oh my!



16 of your favorite fish sticks
1 pkg corn muffin mix
1 can (4 oz) diced chili peppers, drained
1 cup cubed processed cheese spread


Arrange fish sticks in a 9x9x2-inch baking dish that has been sprayed with cooking oil. Bake in a 400 degree oven for 25 minutes. While fish is cooking, prepare muffin mix according to package directions and stir in the chili peppers and cheese. After fish has cooked for the 25 minutes, remove from oven and spread corn mixture over them evenly. Return to oven and bake about another 25 minutes or until corn bread is nicely browned and cooked through. Fish sticks on a whole new level! Serve with some taco sauce and enjoy!
