Yankee Sausage Casserole

Sure to make anyone smile!



2 lbs bulk breakfast sausage
2 cups grated American cheese
4 eggs
1 cup cooked grits
1 box (8-1/2 oz) corn muffin mix
1-3/4 cup hot milk
1/2 cup butter, melted


Cook sausage in a skillet, crumbling as it cooks; drain well and place in a 2 quart casserole dish that has been sprayed with cooking oil. Top with 1 cup of the cheese. In a bowl, combine the eggs, grits corn muffin mix, milk and butter and mix to combine. Spoon mixture evenly over the sausage and cheese. Top off with the remaining cheese. Bake in a 325 degree oven for 45 minutes and enjoy! If you want to have this for breakfast in the morning, fix it the night before, cover and refrigerate until it’s time to cook!
