Cocoa Bread Pudding

Today is chocolate day and I know I just posted a chocolate bread pudding, but this one is a little different, (let us have a moment of silence to give thanks for this wonderful day); I’m going to celebrate with some popcorn mixed with M&M’s tonight while watching a movie! I would have made something chocolate today but have been out hunting tractors for sale and avoiding more flooded roads, another story for another day!

Cocoa Bread Pudding
  • 3 cups soft breadcrumbs
  • ¼ cup cocoa
  • ½ cup chopped walnuts
  • 2 eggs
  • ½ cup sugar
  • 3 cups milk
  • 1 teas vanilla
  • ¼ teas salt
  1. Combine the first 3 ingredients and mix well.
  2. Beat eggs until foamy and while still beating, gradually add sugar. Beating well for 1 minute.
  3. Stir in milk, vanilla and salt and breadcrumb mixture into the eggs.
  4. Pour mixture into a lightly greased 2 quart casserole.
  5. Bake in a 350 degree oven for 45-50 minutes or until set.
  6. Serve warm!

Enjoy with some whipped topping and some chocolate chips if you feel the need for more chocolate!

Chocolate Bread Pudding

Another blast from the past in my old “Carnation Milk” pamphlet, dating from the 1920’s!

2 squares bitter chocolate
3/4 cup sugar
2 cups Carnation Milk
2 cups hot water
2 cups stale bread brumbs
2 eggs
1/4 teas salt
1 teas vanilla

Melt the chocolate, add the sugar and 1 cup of the milk diluted with 1 cup of the water; cook until the mixture is smooth. Soak crumbs for 20 minutes with the remaining milk and water; then combine with the chocolate mixture. Add slightly beaten eggs, salt and flavoring. Pour into a greased baking dish, set in a pan of water, and bake in a slow (300 degree) oven for 1 hour. I think I would need a big glass of ice cold milk with this one….enjoy!
