Kenny’s Kiss My Grits & Burger Breakfast Biscuit

Yesterday I turned Kenny loose in the kitchen again, oh boy! I knew what he was planning as I had to make the grits ahead of time so they would stick together in order to be fried, of course that is an option as you could put a helping of fresh cooked grits on this sandwich and it would still be yummy, a little messier but still yummy! Another substitute you could do, would be to make up some pork sausage patties versus the burger as I know a lot of people shy away from ground beef these days. He made enough to make 4 biscuits and let me tell you, one was all I could eat although my mouth was watering for more; they were just that scrumptious and filling! So with that, Herrrre’s Kenny……

Hey ya’ll…Hope everyone is having a great Thursday. Ya know it’s so close to WEEK_END it makes ya a little crazy. That’s why I was sitting and it dawned upon me that no one has put grits on a breakfast biscuit..not that I could find anyway. SOOO..I got together with my better half and we concocted this awesome breakfast sandwich.

One problem I had was keeping the egg in the onion…

Then about half way threw this awesome recipe..I told Wify we have earned a little nip for this venture….

After about three of these...that sandwich started to look pretty damn good..If i do say so myself!

And moving forward…This is a very filling breakfast sandwich and as you know I had to have Mayo and Ketchup on mine. Now, don’t wait to long before you try this…Toooo many of those little nippers will start a kitchen up with ya!  ;-)

Kenny's Kiss My Grits & Burger Breakfast Biscuit
  • 1 cup precooked grits
  • 4 sweet onion rings about the size of a biscuit and cut about ⅓ of an inch thick
  • 3 eggs, whisked with desired amount of salt and pepper
  • 4 slices of bacon cut in half, cooked crisp
  • ½ lb ground beef (or breakfast sausage)
  • 2 slices of American cheese
  • 4 fresh baked biscuits
  1. Divide grits into 4 patties and brown in a little of the bacon drippings on both sides. Set grits aside and keep warm with the cooked bacon.
  2. Divide ground beef (or pork) into 4 patties and cook in same pan as you cooked the grits until well cooked.
  3. Meanwhile, in another frying pan with a light coating of bacon drippings, place onion rings and brown a little on both sides.
  4. To the onion rings, divide the beaten egg evenly into each slice (egg might run over the top or under the bottom of the onion a little depending on size eggs used and how even you slice the onion as seen in pic!) and cook until fairly set, flip and continue cooking until egg is done.
  5. When eggs are almost done, top each with1/2 slice of cheese to melt.
  6. Stack each biscuit with an egg, burger patty, grit patty and top with two bacon slices.


I’m still trying to figure out why I put this recipe in instead of husband, all I did was make the grits! Enjoy…………

Easy Pink Grapefruit Biscuits

Grapefruit is starting to come into season here in Florida and I bought a big bag of them along with some oranges to mix together for a nice refreshing snack. I had never tried these biscuits before, another recipe I had found a long time ago, and thought, what the hey, let’s go for it. I did a little cheating as I used Bisquick instead of making them from scratch and I also did a drop biscuit rather than kneading out the dough and cutting into regular biscuits, I leave that to those who can make a good light biscuit! Seems every time I try that, my biscuits come out hard, just can’t get the knack, maybe some day? This recipe is very short and easy for me to make……….

Easy Pink Grapefruit Biscuits
  • 2 cups Bisquik
  • ½ cup + 1 tbsp fresh squeezed pink grapefruit juice with the pulp, if mixture seems a little too dry, add a little extra juice, just don't forget to remove the seeds, ha ha
  1. Combine the Bisquick with the grapefruit juice and mix just until moistened.
  2. Spoon into greased cupcake tin and bake in a 425 degree oven for about 10 minutes or until golden brown.
  3. Makes about 12 biscuits.


Kenny really liked these and was happy to get some homemade biscuits…………enjoy!
