Chicken And Bacon Spread

Thinking of the Super Bowl next weekend, I was strumming through some of my older books for any kind of appetizers, dips or snack food for the big game and came across this recipe from a 1958 pamphlet put out by Good Housekeeping and it sounded interesting, a little different and quit simple. Another plus, was the fact that it can be made ahead of time for those of you who are having big parties; there’s nothing better than having your time free from the kitchen for all those guests! I love my old cookbooks and pamphlets and have quite a collection, one dating back to 1906 called the Enterprising Housekeeper with illustrations of handy kitchen gadgets for the then, modern kitchen, WOW! I have my chili all ready for next weekend, I mean, what’s a Super Bowl without chili anyway? Oops, I forgot the brewski, another must have! But during the day, we’ll probably just munch on snacky type stuff and this recipe caught my eye, it’s got BACON!

Chicken And Bacon Spread
  • 1 cup minced, cooked chicken
  • 2 bacon strips, cooked and crumbled
  • ¼ teas salt
  • Dash of pepper
  • ¼ cup mayo
  • 2 tbsp finely chopped apple
  1. Just combine the chicken, bacon, salt, pepper and mayo.
  2. Refrigerate until serving time.
  3. When ready to serve, add the apple and mix.

This recipe only makes a little over a cup, so if you have a large crowd coming, you might want to double or triple it. Serve with cocktail breads or crackers, or if you’re like me, I was thinking on the lines of using it for stuffing celery and maybe adding a little hot sauce too! Hope you enjoy…………….

Sauerkraut Dogs

Today is Pigs-In-A-Blanket Day and there’s not too much you can do to change that recipe, so I decided to do up a dish for hot dogs that’s kind of sweet and spicy and very easy to make.  Just toast up some hot dog buns and slap it on. Wasn’t suppose to be here today but uncontrolled circumstances changed our plans, no problem! We will probably not be home tomorrow, plans as of now, so I will try to get tomorrow’s recipe in later today for then. This is also a great recipe to make ahead of time for a BBQ party, just make sure you make enough to go around!

Sauerkraut Dogs
  • 1 can (14 oz) shredded sauerkraut, with juice
  • 1 small Granny Smith apple, peeled, cored and chopped small
  • 1 small sweet onion, chopped small
  • ¼ cup sugar
  • 1 tbsp bacon drippings
  • Dash of hot sauce
  • ½ lb hot dogs, sliced
  1. Combine all ingredients, save the hot dogs, in a medium saucepan and bring to a boil; add hot dogs.
  2. Reduce heat and simmer on low heat for 30 minutes to blend the flavor.


Love this with Nathan’s hot dogs……………enjoy!
