Any Day Beef And Potato Casserole

My mind is just kinda blah like the weather this week and I haven’t felt much like getting in the kitchen or anywhere else for that matter, to do much of anything. Another problem is that with just husband and I to cook for, making large amounts of a dish, we end up eating them for what seems like days on end. I guess it’s like feast or famine, when you have kids at home everything seems to disappear from the food supply and when it’s just the two of you well, you know! My mind is also floating into the autumn season which I so desperately await and with August half over, I don’t have far to go :-) I’m even thinking about Christmas as I have a few gifts already stashed away! Oh! You do know there is only 19  18 Fridays till Christmas! Your Welcome!

This is just another simple dish I whipped up last night after reading a recipe in Woman’s Circle and by adding a few extra spices and another veggie, it came out pretty tasty. It’s also a one dish meal (other than some homemade garlic bread for sopping!) which is perfect with the heat. Of course it was another excuse to use some of our own fresh ground burger which makes husband very, very happy!

Any Day Beef And Potato Casserole
  • 4 medium red potatoes, cut into ½" cubes
  • 1 lb lean ground beef
  • ½ box frozen spinach thawed, well drained and dried with paper towels
  • 1 can whole peeled potatoes, broken up into uniform size pieces about 1 inch
  • Spices: sea salt, fresh ground pepper, onion powder, garlic powder, oregano, basil and parsley, omitting or adding to your liking
  • Grated mozzarella or Asiago cheese or a combo of both (optional, I did not do this last night, as it was in my head when I was making it and when dinner was done, it went right out of my head, oops!)
  1. Arrange potatoes in a 2 quart baking dish in an even layer; lightly sprinkle with salt, pepper and onion powder.
  2. Crumble meat evenly over the seasoned potatoes and again lightly sprinkle with more salt, pepper and some oregano.
  3. Top meat with a layer of spinach followed by the tomatoes and their juice; season lightly again with the remaining spices of your choice.
  4. Cover and bake in a 400 degree oven for about 40 minutes or until meat is cooked and potatoes are tender.
  5. Five minutes before done, remove cover, sprinkle with cheese and return to oven to melt.
