Almond Raspberry Brownie Bites
  • ½ cup butter, melted
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ½ cup flour
  • ¼ cup raspberry jam
  • 1 teas almond extract
  • 2 eggs beaten
  • ½ cup or more of ground almonds
  1. Stir cocoa into the melted butter until smooth.
  2. Add the granulated sugar.
  3. Ad the flour, jam, almond extract and eggs; combine to make smooth.
  4. Fold in ground almonds and spread evenly into a 9X13 inch pan that has been greased on the bottom; batter will be thin.
  5. Bake in a 350 degree oven for 10 to 12 minutes or until edges begin to pull away from the sides.
  6. Cool on wire rack before cutting into 1 inch squares.
  7. Dust with powdered sugar if desired before serving.
