Christmas Peppermint Brownie Bars
  • For the brownie bars:
  • 2 squares unsweetened chocolate
  • ⅔ cup flour
  • ¼ teas baking powder
  • ⅛ teas salt
  • ⅓ cup butter
  • ½ teas vanilla
  • ¾ cup sugar
  • 2 eggs
  • 1 tbsp milk
  • For the icing:
  • 2 tbsp softened butter
  • 1 cup confectioner's sugar, firmly packed
  • 1 tbsp hot milk
  • Red or green food coloring
  • ⅛ teas peppermint extract
  • 2 teas white corn syrup
  • Dash of salt
  1. Brownie Bars
  2. Grease two 8x8 square pans and line bottom with lightly greased parchment paper.
  3. Melt chocolate and let cool.
  4. Sift flour, and sift again 2 more time with the baking powder and salt.
  5. Cream butter and vanilla until smooth, add sugar gradually, creaming well.
  6. Beat in eggs, one at a time until fluffy.
  7. Add chocolate, then milk and flour until well blended.
  8. Divide batter into the two pans evenly and bake in a 350 degree oven.
  9. Bake for 20 minutes or until barely done; remove to racks and let cool for 3 minutes.
  10. When barely cool, turn over and remove paper.
  11. Icing:
  12. Cream butter and add sugar gradually with the hot milk.
  13. Add desired color and the food coloring.
  14. Stir in syrup, salt and extract; beat mixture until smooth and creamy.
  15. Spread icing over each layer evenly and cut into bars.
  16. Note: Next time I think I will double the icing recipe as it spread pretty thin and we could have liked more.
