Kenny's Kiss My Grits & Burger Breakfast Biscuit
 
Ingredients
  • 1 cup precooked grits
  • 4 sweet onion rings about the size of a biscuit and cut about ⅓ of an inch thick
  • 3 eggs, whisked with desired amount of salt and pepper
  • 4 slices of bacon cut in half, cooked crisp
  • ½ lb ground beef (or breakfast sausage)
  • 2 slices of American cheese
  • 4 fresh baked biscuits
Instructions
  1. Divide grits into 4 patties and brown in a little of the bacon drippings on both sides. Set grits aside and keep warm with the cooked bacon.
  2. Divide ground beef (or pork) into 4 patties and cook in same pan as you cooked the grits until well cooked.
  3. Meanwhile, in another frying pan with a light coating of bacon drippings, place onion rings and brown a little on both sides.
  4. To the onion rings, divide the beaten egg evenly into each slice (egg might run over the top or under the bottom of the onion a little depending on size eggs used and how even you slice the onion as seen in pic!) and cook until fairly set, flip and continue cooking until egg is done.
  5. When eggs are almost done, top each with1/2 slice of cheese to melt.
  6. Stack each biscuit with an egg, burger patty, grit patty and top with two bacon slices.
