Pound Cake Blueberry Waffles
  • ⅔ cup unsalted butter, room temperature
  • 1 cup sugar
  • 4 large eggs, separated
  • ¼ cup milk
  • 1 teas pure vanilla extract
  • 1-1/4 cups flour, sifted
  • ½ teas salt
  • 1-1/4 teas baking powder
  • 1 cup fresh blueberries
  1. Cream together the butter and sugar until light and fluffy.
  2. Beat egg yolks well and add to the creamed mixture along with the milk and vanilla.
  3. Sift the dry ingredients and stir into the liquid mixture.
  4. Whip egg whites until stiff peaks form and fold into batter.
  5. Fold in the blueberries.
  6. Bake in a preheated waffle iron.
  7. Waffles will be soft and not crunchy as regular waffles.
