Clinch Mountain Vinegar Pie
  • 1 cup sugar
  • 2 eggs
  • 2 tbsp vinegar
  • 2 tbsp flour
  • 1 cup water
  • Small lump of butter
  • ½ teas lemon extract
  • 1 baked pie shell
  1. Combine the sugar, eggs, vinegar, flour and water in a double boiler and cook until thick and smooth, stirring occasionally.
  2. Just before removing from heat stir in the butter and the lemon.
  3. Pour into the pie shell; let cool and refrigerate.
