Fresh Creamy Blueberry Pie

Our wild blueberries here on the property were a little late this year and not as plentiful as normal but I still got enough to make this delicious pie with a few to spare.

What really surprised us was that the seeds in them were also a little scarcer than in the past and the flavor much sweeter. I wondered if it was the fact that I have been picking them for so long now that they might be turning domesticated, ha ha! The pudding part of this recipe has an insert that was not called for in the original recipe that I had picked up from my daughter, who adds cream cheese to her banana pudding recipe and I just had to try it with this yummy treat! I am also trying to cook as much as I can this weekend as Monday starts the remake of my kitchen counters yet again, more on that at a later time……………..

Fresh Creamy Blueberry Pie

Ingredients
  • 1 baked graham cracker crust
  • 1 small package (3.4 oz) French vanilla pudding
  • 2 cups milk
  • 2 tbsp unsalted butter
  • 4 oz cream cheese, softened
  • ½ teas vanilla extract
  • 2 cups fresh blueberries, divided
  • 1 tbsp cornstarch
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
Instructions
  1. Combine pudding, milk and butter and beat according to package directions.
  2. Add cream cheese and vanilla and beat until incorporated; cover and chill.
  3. While pudding is chilling, combine one cup of the berries with the sugar, corn starch, lemon juice and zest in a heavy saucepan.
  4. Cook over low heat, mashing the berries and stirring constantly until thickened, stir in remaining berries; let cool.
  5. Spoon pudding mixture into pie crust and top with with berry mixture.

Brownie Pie With Walnut Crust

I have been meaning to add this recipe for two weeks now. It’s what I made husband for his b’day treat and it was so, so good! This recipe was in the 2015 Farmer’s Almanac and I believe it comes from a Comfort Food recipe book as it shows a picture of it. Of course we had it with some of our homemade vanilla ice cream and everyone enjoyed it to no end. One word of advice though, it is very, very rich so make sure your sweet tooth is ready, willing and able! I used a walnut pie crust made from scratch but you can use any crust you deem fit for this sweet and savory treat during the holidays, I think I’ll make little individual pies so I can give them away with some homemade cookies. I also want to try this recipe with pecans and butterscotch chips at that time and maybe a cream cheese pie crust, oh wow! I’ll give you an update at that time…………

Brownie Pie With Walnut Crust
 
Ingredients
  • 1 unbaked 9" pie crust that has been refrigerated
  • ½ cup unsalted butter
  • 1-1/3 cups of chocolate chips
  • 2 large eggs at room temperature
  • ½ cup light brown sugar, packed
  • ⅓ cup sugar
  • 1-1/2 teas vanilla extract
  • ½ cup flour
  • ¼ teas salt
  • 1 cup chopped walnuts
Instructions
  1. Melt butter in a saucepan over medium heat.
  2. Add 1 cup of the chocolate chips and heat for a few seconds more; remove from heat and stir to cover chips with butter.
  3. Set aside for 5 minutes and whisk to smooth.
  4. Combine the eggs, sugars and vanilla in a large bowl and whisk to blend.
  5. Add the melted chocolate and whisk again.
  6. Add the flour and salt and stir until combined.
  7. Stir in the nuts with the remaining chips.
  8. Scrape batter into pie shell and smooth the top.
  9. Bake in a 350 degree oven for 30 to 35 minutes or until a crust develops and the pie slightly rises.
  10. Let cool on a wire rack slightly and serve warm.
