Fish Rolls With Cheesy Spinach Stuffing

When I mentioned these to Husband, the response was not exactly positive so I only made a few and deep-fried the rest. I don’t think that will be necessary the next time as his reaction was nothing but positive. You’d think that after all these years he’d learn to trust me a little more – after 28 years….

Oh yeah, once in awhile some things aren’t that great, but they still get eaten and just not made again, simple solution!

I used fresh Tilapia fillets for this as that is our number 1 go to when it comes to fish, however you can use the fish that is most appealing to your taste buds, just remember to adjust your cooking time to the thickness of the fish used. I also used fresh spinach in lieu of frozen, the choice is yours………….

Fish Rolls With Cheesy Spinach Stuffing
  • 8 large Tilapia fillets or any other fish
  • 10 oz bag of fresh spinach cooked and drained well or 1 box 10 oz frozen, thawed and well drained
  • About 1 cup grated Asiago cheese, or again your favorite cheese
  • 1 lemon
  • ⅓ cup melted butter
  • Old Bay seasoning
  1. Rinse fish and pat dry.
  2. Place a layer of spinach on each fillet and top with desired amount of grated cheese.
  3. Squeeze a few drops of lemon and drizzle a little butter over the cheese; roll up starting from from the smallest end.
  4. Place fish seam side down onto a lightly greased shallow baking dish.
  5. Brush with remaining butter, squeeze more lemon over fish and sprinkle with Old Bay.
  6. Bake in a 375 degree oven for about 25 minutes or until fish is tender and flaky.

Easy Seafood Cracker Spread

The other day when out shopping, we stopped at one of  our favorite seafood restaurants for a nice dinner before heading home. Upon bringing our cold brews to quench our thirst, she also brought a plate of crackers and a spread to top them with which we never had been given there before. Of course I had to ask what it was and she told me it was a fish spread. Next question was what was in it, expecting the answer to be “Well I can’t give out the the ingredients” she surprised me by telling us exactly what was in it. I told her about our site and that I wanted to try to copy it at home so I could share it with you because it was so tasty. The restaurants version had two different kinds of fish in it and not having any on hand, I made my version with some crab meat I had tucked in my freezer. We told her how much we enjoyed it and when we asked for the tab, she surprised us again by bring us a take-out container with 2 more cups of the spread along with extra crackers. First time we ever had a waitress tip us and it was happily taken home for another treat! Gotta love it!!!!

Easy Seafood Cracker Spread
  • 4 oz cream cheese, softened
  • ¼ cup cooked fish, shrimp or crab meat, minced
  • ½ teas Old Bay Seasoning (more or less to taste)
  • Crackers or even celery and carrot sticks
  1. Combine the softened cream cheese with the seasoning and seafood of your choice.

Great for those football parties with some nice cold brew to wash them down. This dip should not be kept too long in the frig, so only make what you think you can eat within a day or two. Enjoy…… It’s OBIF!
