Mint Chocolate Chip Brownies

Hope you had a wonderful day!

Happy Valentine’s Day! I managed to find my way back to the computer to share this little simple thing I did during the holidays. I’m not going to write it up recipe style as it’s just too damn simple. I had managed to freeze some of these brownies hence today’s picture and tonight’s after dinner enjoyment, mint brownies, mint chocolate chip ice cream and last but not least, the Champagne! You noticed that I didn’t expand on the after dinner part too awfully much, ha ha!! The fire place is also ready to go and as we toast to our love, our latest addition in our battery operated toys, Valentine Bears to serenade us with “I Say A Little Prayer For You”! What more could you ask for other that the perfect mate to share it all with!!!!! This year will mark our 28th  year of being together for Valentine’s Day and we both wondered how we put up with each other for so long! Just a whole lotta love and prayers…………….It’s just that simple!

 

To go back to these wonderful brownies, all I did was add one cup of mint chips that you can find during the holidays and online now and add them to one box of brownie mix. You can use your favorite brownie mix and add the mint chips to it or if you can’t find the chips, some mint flavored chocolate bars broken into small pieces. These were a big hit to all who enjoyed them with us. Like I said, simplicity at work!!!! Well I’m off to start our Valentine din-din and as I’m experimenting tonight, it could be great or then again, a disaster! Whichever happens, I’ll let you know and if the worst happens, maybe you can straighten me out ( God knows I need all the help I can get) or give me some subtle hints as to how to fix the problem I created………….Happy Valentine’s Day again and enjoy!

Glazed Blueberry Honey Breakfast Cake

Folks, I’m still picking blueberries, probably 4 quarts already with more to pick tomorrow. I have been giving them away and freezing the rest for use later on. Having so many berries this year is the cause for so many of these tasty recipes popping up on mama. The one thing about our wild berries, is that they do lack a little of the sweetness that you have in the store bought ones which is fine by us because they have that little bit of tartness to compliment these sweet treats I have been posting.

Every morning when I go down the drive to get our paper, I have to stop by just to have a little breakfast for my short journey! This recipe would be a great way to start dad off this Sunday served up with a piping hot cup of coffee. I also topped my cake with some chopped pecans which was the cat’s meow for me but you can add any chopped nut of your liking or DAD’S………..

Glazed Blueberry Honey Breakfast Cake

Ingredients
  • For the cake:
  • 2 cups flour
  • ¾ cup honey
  • ¼ cup melted butter
  • ¾ cup milk
  • 2-1/2 teas baking powder
  • ¾ teas salt
  • 2 cups fresh blueberries rinsed and dried or 2 cups frozen berries, thawed and drained
  • For the topping:
  • ½ cup powdered sugar
  • ½ teas vanilla
  • 1-2 teas hot water
  • Chopped pecans, as many as you want to add
Instructions
  1. Mix the flour, honey, butter, milk, baking powder and salt in a large bowl and beat for 30 seconds; fold in the blueberries.
  2. Pour batter into a 9-inch round cake dish that has been greased and floured.
  3. Bake in a 375 degree oven for 45 to 50 minutes or until cake tests done.
  4. Cool for 10 minutes.
  5. While cake is cooling, combine the powdered sugar and vanilla and adding enough water to make it to a drizzling consistency.
  6. Drizzle cake immediately and sprinkle with nuts if desired.
