Hominy Cheddar Bake

our flag 007

Well it’s another Monday and with a trip to the doc tomorrow, I figured I’d get something in today. But first I want to share another kitchen disaster that happened yesterday. I had seen a waffle pizza on the internet and didn’t bother to go to the site to read the recipe, hence YUK!

Just didn't work for me! You?

Just didn’t work for me!
You?

My loyal Husband ate his but mine went right to the scrap bag for the chickens… It was doughy but yet well cooked and I don’t know if I had my waffle iron on too low of a setting or what, oh well. I will try it again someday and maybe I will be able to perfect it in the future.
Now onto hominy, one of our favorites foods! Growing up in the north, I never experienced corn in this fashion and it wasn’t until I met Kenny that I tried it. Grits was another thing that I never had until I moved to the south, two great foods that most of the poor Yankees will never experience!!!

Hope you all had a nice weekend and no disasters in your kitchen? Got another new dish in the oven as we speak and will share with you hopefully on Wednesday or Thursday. Working on new counter tops in our kitchen with pics and a story coming soon. And on a sad note, lost one of our chickens this weekend to God only knows what, but she wasn’t one of the layers anyway,,,, one less mouth to feed!
