Blueberry Biscuit Cookies Fresh From Florida
This month is fresh blueberry season here in Florida and although, up here in north Florida, our berries are just now starting to develop and they don’t usually become pickable for us until the end of May and possibly the beginning of June depending on what kind of winter we have encountered!
Kenny and I have talked about moving farther up north and to tell you the truth, the fact that I can have two gardens a year and get almost any kind of fresh produce year round is one of my reasons to stay put, I’m just so spoiled. Our local produce stands and grocery stores give us plenty of fresh fruits and veggies if I do not have them growing in my garden and because they don’t have to be shipped from long distances, the prices are always modest, giving us an abundance of goodies to choose from. This year for example, the blackberries blooming in our yard are in full force more than I have ever seen and if they mature as good as they look, I will be making jams and cobblers out the ying-yang!
Although we have a lot of blueberry bushes on the property and they produce sweet berries, because they are wild they have a lot of seeds hidden inside making them more of the variety of crunchy blueberries which will raise havoc on the old toothers, ha ha! Thank God we have several blueberry patches nearby where we can go and pick our own, minus the seeds :) We also have a wonderful Blueberry Festival just a couple of miles from where we live where they have all kind of different blueberry treats for you to try, talk about blueberry heaven, you’re there!
The Florida Department of Agriculture And Consumer Services offers many different recipes for us to try and when I spied a recipe for Blueberry Biscuit Cookies, I was hooked; a simple recipe made with biscuit mix, honey, blueberries and pecans, so everything I have to use is locally harvested, well, except for the biscuit mix which I can make myself so I guess you can say, all LOCAL. We have a neighbor who makes fresh honey and pecans are also native to north Florida because our climate is a lot like Georgia, the Pecan State, and our neighbor also has them!

Blueberry Biscuit Cookie Recipe:
2 cups biscuit mix
1 cup fresh blueberries
1 cup chopped pecans
2 tbsp low-fat milk
1/2 cup honey, divided (I used Gallberry honey)
Preheat oven to 350 degrees.
Mix all ingredients except honey in a large mixing bowl.
Add enough honey to make a stiff cookie dough. *See note below
Place tablespoonfuls of dough onto a greased cookie sheet about 2-inches apart.
Bake until edges start to turn golden, about 15 minutes.
Remove from oven and drizzle with remaining honey; return to oven for an additional 5 minutes and serve immediately. **See note again
*Note: It took almost all of the called for honey to make a stiff dough, so I had to use a little extra when it came to the drizzle part.
**Note: I advise to wait at least a few minutes before munching into these little wonders as the berries are extremely hot and the honey comes in a close second, take caution!
