Minty Fruit Dressing
With tomorrow being the Kentucky Derby, I hope all you ladies have your big floppy hats ready to wear and all the ingredients for those tasty Mint Juleps on hand for the big day! I used to frequent the Saratoga Race Track quite a lot as I lived in Saratoga many moons ago and loved the thrill of watching the horses up close and personal, it was a very heart pounding experience. We like to watch the derby every year but it’s just not the same as being there in person. Kenny and I both have our pics for the race and this year we both chose the same horse, great minds think alike! Anyway, in honor of the big day, I thought I’d put in a couple of recipes that include fresh mint!
- ¾ cup sugar
- 1 teas dry mustard
- 1 teas salt
- ⅓ cup vinegar
- 2 tbsp chopped onion
- 3 tbsp fresh mint leaves
- 1 cup salad oil
- Place the sugar, mustard, salt and vinegar in a blender or food processor; process for 30 seconds on medium speed.
- Add onion and mint and process on high for 5 seconds.
- Drizzle in the oil and continue to process until mixture has thickened.
- Store in the frig for at least 2 hours to meld the flavors.
With fresh melons and berries in the store and warmer weather (for some of us), this is a great way to top off a nice chilled bowlful of fruit………….enjoy! Oh, go Revolutionary!
