Butterscotch Apple Pudding

Oh my, can you think of any combination better than that! Just in time for the fall when apples are plentiful. Today is National Butterscotch Pudding Day and I thought this recipe fitting for the occasion and time of year. This is not a typical pudding as you may think by the title, and I haven’t made it yet. The recipe was given to me by a family member.

Oh those fresh apples!

Butterscotch Apple Pudding
 
Ingredients
  • FOR THE SAUCE:
  • 1 cup brown sugar
  • 2 cups water
  • ¼ cup butter
  • FOR THE BATTER:
  • ⅔ cup brown sugar packed, divided
  • 1-1/4 cups diced peeled apples
  • 1-1/2 cups cake flour
  • 1 teas baking powder
  • ½ teas salt
  • ¼ cup butter, melted
  • ½ cup milk
Instructions
  1. FOR THE SAUCE:
  2. Bring ingredients to a boil in a baking pan and boil for 2 minutes
  3. FOR THE BATTER:
  4. Mix ⅓ cup of the sugar with the apples.
  5. Sift together flour, baking powder and salt.
  6. Work in the remaining sugar and butter.
  7. Add milk to make a soft dough.
  8. Spread apples into the sauce and spread batter over the apples.
  9. Bake in a 400 degree oven for 25-30 minutes.
