Garlicy Fried Eggplant

This is Eggplant Month and if you love garlic, this one’s for you!



Garlicy Fried Eggplant
  • 2 eggplant
  • 10 large cloves of garlic
  • ½ cup flour
  • ½ cup biscuit mix
  • 1 teas oregano
  • ½ teas pepper
  • 1 egg
  • 2 tbsp water, approximately
  1. Slice eggplant into ½-inch slices, sprinkle both sides with salt and set aside for ½ hour.
  2. Mince 6 of the garlic cloves and place in a bowl with the flour, biscuit mix, oregano, pepper and egg. Mix in enough water to make the mixture the consistency of pancake batter.
  3. Pour a mixture of half olive oil and half vegetable oil in a large skillet to make the depth of ¼ inch deep and heat over medium heat.
  4. Crush the remaining garlic with a knife and add to the oil. Saute until lightly browned. Press garlic again with a spoon to get as much flavor as you can. Remove from oil.
  5. Coat eggplant with the batter and fry slowly in the oil on both sides until golden brown.
  6. Drain on paper towels and serve with your favorite marinara sauce.

I like to toast some hard rolls, top with slice of eggplant, a big fat slice of tomato and sprinkle with parmesan cheese. Enjoy!
