Ham And Cheese Veggie Salad
So good during the summer months when it’s blistering hot outside!
8 oz corkscrew pasta
1/2 lb cooked ham, julienned
1 cup broccoli flowerets
1 cup sweet peas, thawed
1 cup yellow squash, thinly sliced
1 small red sweet pepper, cut in thin strips
4 oz Swiss cheese, julienned
1/2 cup mayo
1/4 cup Dijon mustard
1/4 cup milk
1/4 cup grated Parmesan cheese
Cook pasta according to package directions.
Combine pasta with 6 ingredients in a large bowl.
Combine the mayo, mustard and milk; whisk well to blend.
Add to ham mixture and toss to coat. Cover and chill for at least 2 hours.
When ready to serve, sprinkle with the Parmesan cheese and enjoy a nice dinner without the heat in the kitchen!
