Pineapple Filled Pastries
If you like pineapple, you’re going to love these!
Combine the pineapple, sugar and water in a saucepan. Bring to a boil, reduce heat to medium and gently boil for 25 minutes, stirring occasionally. Watch last few minutes of the cooking time to prevent sticking. Set aside and let cool. In a mixing bowl, cut butter into the flour until mixture is crumbly. Add egg yolks that have been beaten and vanilla; stir to combine mixture. Add the water, 1 tablespoon at a time, tossing with a fork after each addition until mixture forms a ball. Cover and refrigerate for 1 hour. Divide dough in half and roll each half into a 10×10 inch square on a lightly floured surface. Cut each half into 16 (2-1/2 inches each) squares. Place about 1 teaspoon of the pineapple mixture diagonally in the center of each square. Fold up 2 side corners and overlap slightly. Place on an ungreased cookie sheet and brush with the egg white that has been slightly beaten. Bake in a 400 degree oven for 10-12 minutes or until golden brown. Cool on wire racks and enjoy!
