Zucchini Carrot Loaf

I know you’re probably tired of zucchini recipes, but I have so many of these tasty veggies coming out of the garden, it’s all I can think of. I’ve been making this recipe for years and when I used to visit my mom, she always watched to see if I had one of these stashed somewhere in the car for her to munch on!


1-1/2 cups flour
1 cup sugar
2 teas baking powder
1/2 teas baking soda
1/4 teas salt
1/4 teas ginger
1 egg, beaten
1/4 cup vegetable oil
1 cup grated zucchini
1/2 cup grated carrots
3/4 cup chopped walnuts


In a large bowl, mix together the dry ingredients. Add the egg, oil, zucchini and carrots and mix well. Add the nuts and mix again. Turn into a 9-inch loaf pan and bake in a 375 degree oven for 50-60 minutes or until wooden toothpick inserted in the center comes out clean. I hope you enjoy this for as many years as we have and continue to! Ken and I enjoy this with a nice cold fruit platter during the summer months…………..

    Thanks Jennifer, I don’t like a lot of today’s recipes, just give me some down home cooking! Maybe it’s my age and upbringing but I try to just find and make up recipes that are made with basic foods.
