Sour Cream And Onion Zucchini

I know I’m on my zucchini kick again, but with so many zucchini popping up every day, I have to do a lot of cooking with them. This is also “Gifts From The Garden” month and the good Lord is certainly blessing us this year!

 

 

1-1/2 cups coarsely grated zucchini
1 tbsp butter
3 tbsp minced onions
1/4 teas tarragon
1 tbsp fresh lemon juice
1/2 cup sour cream
1/4 teas pepper

 

Boil the zucchini in salt water for 5 minutes and drain thoroughly. Add the butter and onions to the pan you cooked the zucchini in and saute until onions are tender. Add the zucchini, lemon and seasonings. Stir well over the lowest possible heat and slowly add the sour cream. Mix gently, and heat for 4-5 minutes on very low heat to avoid the sour cream from curdling. Enjoy!
