Homemade Cranberry Sherbert

With hot weather here for us, a nice dish of homemade sherbert in the afternoon is always a treat, easy to make and cheaper than store bought!

 

3/4 cup sugar
1-1/2 teas gelatin
Dash of salt
2 cups cranberry juice cocktail, divided
2 tbsp lemon juice

 

In a heavy saucepan, mix sugar, gelatin and salt. Stir in 1 cup of the cranberry juice. Heat and stir over medium heat until sugar and gelatin are dissolved. Remove from heat and add the remaining juice and lemon juice. Freeze in a freezer container until partially frozen; remove and beat with an electric mixer until smooth. Return to freezer and freeze for several more hours before serving. So refreshing after working out in the yard on a hot day!
