Fruity Cookie Pizza

I thought with the kids getting out of school soon, this might be fun for them to make with mom! Another idea, is to make this for a kids birthday party and write happy birthday with the fruit!

1 pkg (18 oz) refrigerated sugar cookie dough
1 pkg (8 oz) cream cheese
1/3 cup sugar
1/2 teas vanilla
4 cups fresh fruit, sliced into pieces, see note
1/4 cup peach preserves
1 tbsp water

Cut dough into 1/8-inch slices and line a 14-inch pizza pan, pressing edges together to form the crust. Bake in a 375 degree oven for 12 minutes or until lightly golden; cool. Blend together the cream cheese, sugar and vanilla and spread over the crust. Arrange fruit over the top. Mix together the preserves and water and spread over the top of the fruit. The kids will love this one!
Note: Use any fruit such as bananas sliced, strawberries, grapes halved, blueberries, etc.
