Spoon Bread Tamale Casserole

How can you go wrong with all these good flavors in one dish!

 

1-1/2 lb lean ground beef
1/4 cup olive oil
1 cup chopped onion
1 garlic clove minced
1 tbsp chili powder
1/4 teas fresh ground black pepper
1 can (20 oz) canned tomatoes
1 can (16 oz) whole kernel corn
1 cup olives
1 cup corn meal, divided
1 cup water
1-1/2 cups milk
1 teas salt
1 cup grated sharp cheddar
2 tbsp butter
2 eggs, beaten

 

Brown beef in the olive oil; add the onions and garlic and cook until transparent in color. Stir in the next 4 ingredients and cook for 5 minutes. Mix 1/2 cup of the corn meal with the water and stir into the meat mixture. Cover and simmer for 10 minutes; stir in the olives. Put mixture in a 2-quart casserole dish. Heat milk, salt and butter in a saucepan; stir in the remaining corn meal and cook until thickened. Remove from heat and let cool slightly. Beat in the eggs and spread over the meat mixture. Top with the grated cheese. Bake in a 375 degree oven for 30 minutes and enjoy!
