Sweet Pickles Freezer Style

Can’t wait for the cucumbers to start coming in so I can try this recipe! I had no idea you could freeze pickles……


8 lbs cucumbers,  sliced thin
1 cup thin sliced onion
3 tbsp salt
4 cups sugar
2 cups vinegar
1 teas celery seed
1 teas turmeric
1 teas mustard seed
1/2 teas alum


In a large container, combine the cukes, onions and salt; mix well and let stand for 3 hours, stirring occasionally. Drain and rinse. Combine the remaining ingredients in a bowl and let stand for 2-3 hours, stirring often. Pour over the cukes and stir well. Pack into 1 pint freezer containers leaving a 1-inch headspace. Cover and freeze. These will stay for up to 6 weeks in your freezer and claim to stay crispy. Enjoy!
