Dandelion Salad

Boy this brought back memories of my Grandma Josie. I think, if I can remember right she also made dandelion wine! And maybe grandma was smart, as they rank in the top 4 green veggies. This is also a good way to get the yard weeded and get even with those pesky plants!

 

1 lb dandelion green, flowers and stems removed
1 small onion, diced
1/2 cup red wine vinegar
1/2 cup water
2 slices bacon
Pinch of sugar
1/4 teas salt
1/8 teas pepper
1/4 teas oregano
1 hard boiled egg, sliced

 

Wash greens carefully, using several batches of water to remove all the sand. Dry on paper towels. Cut into 2-inch pieces. Place greens and onions in a salad bowl. Meanwhile, cook the bacon until crisp; drain on paper towels, reserving the drippings. Combine the drippings with all the seasonings and pour over the greens. Toss to coat. Garnish with the bacon that has been crumbled and the sliced egg. An oldie but a goodie!

    I really never talked to someone who tried this, and I was leery of it myself. However, now I’m going out and pick some out of the yard and do a taste test!

  2. Thank you for this recipe. Just tried it and it was Delicious! So quick and easy! And FREE salad greens…I loved that, too! :-) BTW I added sliced tomatoes to mine.
