Onion And Carrot Sauce

This tasty sauce is good over veggies, beef or ham and as you know, I love my onions!



2 cups chicken or beef broth

1/4 cup butter
1/4 cup chopped onion
3 tbls shredded carrot
1 bay leaf
4-1/2 tbls flour


Melt butter in a skillet over medium heat. Add the onions, carrots and bay leaf and cook for about 5 minutes. Blend flour into the mixture and heat until bubbly, stirring constantly. Remove from heat and slowly pour in the broth, again stirring constantly. Return to the heat and bring to a rapid boil, stirring while doing so. Cook for 1-2 minutes or until thickened. Remove bay leaf and serve!
