Floridian Sweet Potatoes

I know a lot of you will be having these tasty treats for your big Easter dinner. If you’re not fond of the candied sweets because they’re too sweet, try this for a different taste!

 

4 medium sweet potatoes
1/2 teas grated orange rind
1/2 cup fresh orange juice
1 tbls brown sugar
1/4 teas cinnamon
Salt to taste

 

Peel, slice and cook potatoes until tender. Drain and place in a large bowl with the remaining ingredients. With an electric mixer, beat until light and fluffy. Turn into a baking dish and cover with foil. Bake in a 350 degree oven for 25 minutes or until steaming hot! Where’s the ham?

  1. Wow Sandy, I’ve never heard of tangerine oil but you can be sure I will start looking for it, maybe online? Like you, I don’t like the sickly sweet additives when I’m having sweet potatoes! Thanks for the tip as you’ve got my curiosity going crazy. Thanks Sandy, Regina….

  2. Hi, if you can find some food grade tangerine oil, after cooking your sweet potatoes, mash them add just a bit of butter, then add about 3 drops of tangerine oil…a little goes a long, long way. Be sure you mix it through well, maybe add the three drops first so it. The original recipe calls for brown sugar but we think it’s not needed. So much better to me than the marshmello mind that I find way too sweet.
