Hamburger And Julienne Vegetable Stew

Our kind of dinner, nothing fancy, just good!

 

1 lb ground beef
2 tbls butter
1 bunch scallions
5 medium potatoes
4 medium carrots
3 celery ribs
1/2 teas oregano
Salt and pepper to taste
1 can French style green beans
1 can cream of onion soup

 

Melt butter in a large skillet, add beef and brown lightly. Cut roots from scallions, cut into 1/2-inch pieces and add to the beef. Peel the potatoes and carrots and cut them along with the celery into thin 2-inch sticks. Place these over the beef; sprinkle with seasonings. Add the liquid from the beans, cover and simmer over low heat until veggies are crisp-tender, about 15 minutes. Add the green beans, and soup and cook for another 10-15 minutes. For this recipe, I like to add extra ground beef. Enjoy!
