Fried Pineapple Chunks

Here’s a little different idea to go with your Easter ham!


1 can (15-1/2 oz) pineapple chunks
1/4 cup + flour
1 teas brown sugar
1 egg, beaten
2 tbls milk
1/4 teas salt
1/2 cup + soft breadcrumbs



Mix the flour and sugar in a small bowl. Combine the egg, milk and salt and mix well. Drain pineapple and dredge in the flour mixture, dip in milk mixture and end by dipping into the breadcrumbs. Fry pineapple in a small amount of hot oil until golden brown, turning once. Drain on paper towels. Husband wants to try these on a sandwich next time we fry them up!
