Oniony Cheeseburger Pie
Found this recipe in an old pamphlet I’ve had for a long time and as I love onions, here goes…….

 
1 tbls vegetable oil
1 lb sweet onions
1 lb ground beef
1/3 cup ketchup
2 teas prepared mustard
1/4 teas salt
1/4 teas pepper
2 can (8 oz each) refrigerated crescent rolls
1 cup shredded cheddar
2 eggs, beaten
1 egg yolk, beaten
1 tbls water

 
Slice and quarter the onions, it should give you 3 cups. Heat oil in a skillet over medium heat and cook onions, covered, for 10 minutes, stirring occasionally. Remove onions and brown the meat; drain off any excess fat. Stir in the ketchup, mustard, salt and pepper to the meat and set aside. On a floured surface, unroll dough from one can of the rolls. Press together the perforations and roll dough to a 12-inch square. Place dough in a 9-inch quiche dish; trim to 1-inch beyond the edge of the dish. Spoon meat mixture into the dough. Sprinkle with cheese, top with onions and pour the 2 eggs over the top of the onions. Unroll remaining dough, repeat steps as in the first preparation except roll out to an 11-inch square. Place on top of the onions, trim and pinch together with bottom dough layer. Combine the egg yolk with the water and brush over the top. Bake in a 350 degree oven for 40 minutes or until nicely browned. Let stand for 10 minutes before cutting………..Have a simple salad of lettuce, tomato and more onion and enjoy!
