Stuffed Sweet Onions
I want to try this one on the grill instead of the oven…next cookout!

4 medium sweet onions (1-1/2 lbs)
2 tbls Italian salad dressing
1/2 cup diced bell pepper
1 cup diced zucchini
1/2 cup soft bread crumbs
1/2 cup shredded mozzarella
2 tbls minced fresh parsley
1/4 teas dried oregano

Peel onions and cut a slice from the top and bottom, chop slices and set aside. Cook onions in boiling water 15-20 minutes or until tender but not too soft. Cool and remove the center of the onions leaving the shells intact. Save centers for another use. Heat salad dressing in a medium skillet until hot. Add the chopped onion, pepper and zucchini and saute until tender, stirring constantly. Remove from heat and stir in the bread crumbs along with the cheese and spices. Fill each onion shell with about 1/2 cup of the veggie mixture and place in a casserole dish that has been sprayed with cooking oil. Cover and bake in a 350 degree oven for 20 minutes; uncover and bake an extra 5 minutes. Great side to go with steaks! Enjoy!
