Seasoned Black Eyed Peas
This recipe really kicks up the black-eyed peas and quite different than my way of cooking them!
1 lb bag dried black-eyed peas
1/4 lb crisp fried Canadian bacon, chopped
2 medium onions, chopped
2 celery stalks, chopped
1 small bay leaf
1 clove garlic, minced
1 red pepper pod
1 can (6 oz) tomato paste
2 teas salt
1/4 teas pepper
Wash peas, place in a large pot with water and let soak for 45 minutes. Drain, rinse and return to pot. Add just enough water to cover the peas and add the remaining ingredients plus one tomato paste can of water. Bring to a boil, reduce heat, cover and simmer for about 3 hours or until tender. Have some corn bread and extra chopped onions and enjoy!
