Microwave Dijon Chicken Breast
With the price of meat going up, we’re looking for more chicken recipes to help our budget……


8 large chicken tenders, about 3 pounds
3 tbls butter
2 tbls flour
1 cup chicken broth
1/2 cup light cream
2 tbls Dijon mustard

In a microwave safe dish and large enough to place the chicken in a single layer, melt the butter on HIGH for 30 seconds or until melted. Roll chicken in the butter to coat, cover and microwave on MEDIUM for 25-35 minutes or until chicken is not longer pink and juices run clear (if microwave does not have a turntable, rotate halfway through the cooking time). Remove chicken from dish and keep warm. Whisk flour into the drippings and then stir in the broth and cream. Cook on HIGH for 2-3 minutes or until thickened, stirring often. Stir in the mustard. Place chicken back into the dish and spoon mixture over it; heat on HIGH for 1 to 1-1/2 minutes more and enjoy………….
