No Crust Quiche Lorraine

This recipe is for the microwave and when you don’t have time to make a crust, this is perfect and quick!

 

10 slices bacon
1 cup shredded cheddar cheese
1/4 cup minced onion
4 eggs
1 can (13 oz) evaporated milk
3/4 teas salt
1/8 teas cayenne

 

 

 

Cook bacon until crisp, drain and break into pieces. Sprinkle the bacon over the bottom of a 9” microwave safe pie plate and top with the cheese and onion. Whisk together the eggs with the remaining ingredients until well blended. Pour over the bacon mixture and microwave on medium for 13 minutes, stirring twice. Let stand for 10 minutes before serving and enjoy!
